Can you start in flight at any other city other than the default setting ?

absolutely. Any airport you want. Just create a flight you'd like to have set up when you start FSX up (aircraft, time, weather, airport, etc) and go to SAVE FLIGHT
Save your flight under a name you'll remember, then there should be a box that says something about "make this your default flight"

check that box, and FSX will load that flight every time you start it up.
