You asked some good questions:
I mostly land using the Spot Plane view because it gives me a better depth perspective. However I am striving to spend more time in the Cockpit view because that relates to the real world.
Real pilots turn with their Rudder Pedals during taxi because the aircraft is not moving fast enough to utilize the Ailerons.
When throttling on the runway, real pilots turn with their Rudder Pedals (initially) because the aircraft is not moving fast enough to utilize the Ailerons. When the aircraft picks up speed, the Ailerons then become effective.

PS: I just got home from a 2 day course presented by the Civil Air Patrol and taught by am employee of Homeland Security. I have now completed all 6 courses related to NIMS (National Incident Management System). NIMS is a system use by most Local, State, and National organizations for Emergency Management.

I hope that I never have to participate in any form of Emergency Management as a result of any problems in the state of Florida. However, you know better than me about the hurricane problems that seem to occur in our beautiful state.
My squadron could be called upon to provided air support. Other squadrons in the state of Florida could be called upon to provide various forms of ground support. the NIMS courses prepare us to coordinate our efforts with other teams and organizations.  |

Since I had a very busy schedule this past week, I did not take enough time to answer your question pertaining to when to use Rudder and/or ailerons during taxi and takeoff.

As stated in my previous response, you should always use your rudder pedals to steer during taxiiing. The rudder peddals control the nose wheel which is using for steering on the ground. The rudder pedals control the rudder when you are in the air which is used to control "Yaw".
The ailerons control "bank" while you are in th air. When you watch the above listed videos, you will also learn that the airerons will also be used to keep the wings down while on the ground and when you have encountered a "cross-wind".
