As far as sensitivity settings, it depends on where you have the realism set in FS as well as what brand and model of 'stick you are using. If your machine is capable, you can try the profiler program for your make of controller. As far as starting with the engines off, there are a couple of ways to do this. One is to use the "cold and dark" utility which is available on the web as freeware. The other method is to set everything up with your fave bird at your fave spot to start from and go through normal shutdown procedures. Then, save the flight and end the flight. When you save the flight, there will be a box to select "make this the default flight", do so and exit FS. Then restart and confirm you have started from your new default flight. If all is well, you should be "cold and dark" at game start. The next time you start FS, your default selections should now be the plane, airport and time you had selected in the "create a flight" menu. But I could be wrong.
